A Soup That Soothes The Soul!

Turkey Meatball Soup


Ingredients:

• 6 cups Chicken Stock
• 1 cup Chopped Onion
• 1/2 cup Chopped Celery
• 1/2 cup Chopped Carrots
• 2/3 cup Rice
• 1 lb. Ground Turkey
• 1/4 cup Bread Crumbs
• 1 Large Egg
• 1/4 cup Parsley
• 1 teaspoon White Pepper
• 1 teaspoon Dried Thyme
• 1 cup Frozen Peas

1. In a 4-5 quart pan over high heat, combine broth, onion, celery, carrots and rice. Cover and bring to boil. Reduce heat and simmer 10 min.

2. Meanwhile, mix turkey, bread crumbs, egg, parsley, thyme, pepper and salt in a separate bowl. Shape mixture into tablespoon size meat balls.


3. Increase heat on broth mixture to a boil. Drop meatballs into soup. Reduce heat to a simmer until meatballs are no longer pink 8-10 minutes.

4. Add peas and cook for another 2 minutes.

5. Garnish with parsley! Bon Appetit!
